Second time buyer questions.

Hey all, I plan on purchasing a sport bike by the end of this year with the GSXR750 in my scopes.
I'm wanting a sport bike because of the power, the speed, and the handling ability my last bike didn't have.
I rode for about a year on a Kawasaki KZ400 which I restored and rode for the good part of a year.
I learned how to ride with this bike and never laid it down or had an accident while riding it.

But my experience with it left me with more.
So as a first time sport bike purchaser, I've been told that I would need to learn a bit of riding if I go to a good riding class or shool.
The motorcycle safety foundation was mentioned to me and was wondering what you all though about it.

Also, any place that will actually teach me how to ride better or to learn the basics of a sportbike?
I live in the Mississippi area and would need someplace closer to this area for some schooling.

It's been about 15 years since I've ridden and don't think that I'll have any issues but then again, I want to be safe while riding this new bike too.

I'll probably have more questions as time goes on as both and my nephew are going in on this together.
Thanks.
