For that application, use the Stage 1 cam. Stage 2 will be way too much cam for that motor.
The MAF conversion is really straight forward. I did it in my '88 because it was originally a Pennsylvania car. You can buy all the parts you need from around the internet and then buy the MAF computer from some online Mustang forum or something. I used an A9L computer and I bought the conversion harness from Pro-M. Depending on what type of MAF equipment you want to run, you'll need different stuff. Basically, you'll need the harness, the computer, and all the MAF plumbing. Install the plumbing, run the harness through the firewall, and pull the old computer. You'll need to switch some pins around, but other than that, it's simple as can be. Plug in the new computer and start 'er up. It took me about 20 minutes just because I couldn't pull the old computer from the passenger kick panel. Here's the catch though... If you're keeping the car stock, stick with the speed density system for now. SD is faster stock than MAF and it's going to be more reliable since it was the original equipment on your car. Once you start messing with the vaccum, then you'll need to do the MAF conversion because of the way MAF operates compared to SD (if you'd like a technical explanation, I can give it, but it doesn't really matter at this point. Just know that SD and a cam is no good).
